THISTLE CAKE AND SERRA DA ESTRELA CHEESE ICE CREAM

Thistle Cake and Serra da Estrela Cheese Ice Cream

Recipe by Paulo Cardoso, Chef de Cuisine Parador, at  Casa da Ínsua

Let us start with the Thistle Cake

Ingredients:
Oil  – 0,7lt
Thistle (leaves) – 0,1kg
Egg Yolks  – 10 units
Sugar – 0,8kg
Branca de Neve flour – 0,7kg
Baking Powder – 0,01kg
Egg Whites – 10 units

Preparation:
We grind the thistle with the oil.

Put it in a mixer and add the sugar plus the yolks and beat in a mixer until it triples in volume.

Then we add little by little the flour, mixed with the baking powder.

Finally, add the egg whites, folding in very carefully.

Pour onto a tray lined with parchment paper and greased.

Bake in the oven for 25 to 30 minutes at a temperature of 160/170ºC.

 

And now the Serra da Estrela Cheese Ice Cream Casa da Ínsua

Ingredients:
Egg Yolk – 3 uniis
Sugar – 0,15 kg
Milk– 0,2 Lt
Cream – 0,2 Lt
Serra da Estrela Cheese – 0,12 Kg

Preparation:
Put it in a pan on the fire:

Sugar, milk and yolks.

We stir for 10 minutes (always at low fire).

Then we add the cream.

We stir another 2 minutes.

Finally, we add the Serra da Estrela cheese, and stir for another 4 minutes.

Freeze the mixture.
