THE LAMBING SEASON IS ENDING: PDO CURD CHEESE WILL RETURN IN OCTOBER.
The authentic Serra da Estrela PDO Cheese, made exclusively from the milk of Bordaleira ewe in the region of Serra da Estrela, is produced solely during the lambing season, i.e. from October to June. During this period of time, the Bordaleira ewes produce the milk which due to its fat and protein levels allow this delicacy to be produced.
Therefore, we will complete in the next few days the production season of Vale da Estrela PDO Curd Cheese, and we will resume this awarded gold medal product next October.
