SERRA DA ESTRELA MATURE PDO CHEESE SAUCE
Serra da Estrela Mature PDO Cheese Sauce, a recipe by Chef Diogo Rocha, from Restaurante Mesa de Lemos, in Viseu.
The restaurant was awarded a Michelin star this year.
Ingredients:
100 grs tomato
100 grs cucumber
100 grs potato
200 grs Serra da Estrela Mature PDO Cheese
100 ml coconut milk
10 g coriander
oil
How to do it:
Start by laminating the tomato, cucumber and potato, previously washed.
Cut the rindless cheese into cubes.
In a saucepan, combine the milk and cheese, stirring constantly until melted.
Add the julienned coriander.
Fry, or dehydrate, the tomato, or cucumber and potato, to accompany the sauce.
