Vale da Estrela Dairy has just launched a new product, the Serra da Estrela Mature PDO Cheese. Almost half a year after starting its activity, Vale da Estrela Dairy continues to invest in quality products.

For those who appreciate a more intense flavor, matured cheese is the choice due to its very own characteristics resulting from a prolonged natural maturation.

The texture is less buttery and the crust has an orange/brown color due to the paprika and olive oil coating.

The essence of the cheese remains: it consists only of raw Bordaleira sheep’s milk, salt and thistle.  Here you may find further details.

In some tasting sessions held when the Serra da Estrela Mature PDO Cheese was presented, opinions were very positive and some highlighted the excellence of its quality.
