SERRA DA ESTRELA MATURE CHEESE REY BREAD

Serra da Estrela Mature Cheese Rye Bread recipe
Recipe by Chef Diogo Rocha from  restaurant Mesa de Lemos, in Viseu

 

Ingredients:

600gr whole rye flour

200gr rye flour T65

200gr white rye flour

800gr de warm water

180gr rye mother dough

20gr Salt

100gr grated Serra da Estrela mature cheese

50gr Serra da Estrela mature cheese, in cubes

 

Preparation:

Add all the ingredients and mix well by hand, until you get a homogeneous mass.

Place the mixture in a bowl greased with oil and cover with cling film.

Let it rest overnight.

Divide the dough into 4 portions and bake in a preheated oven at 200ºC for about 40min.
