Already in the 14^th century the cheese produced in Serra da Estrela was considered one of the best in the Kingdom. Gil Vicente, in the 16^th century, reinforces the note when “recommends” to the inhabitants of Serra da Estrela the sending of cheese as part of the gift to be offered by Beira to Queen Catherine, wife of King John III, on the occasion of the birth of her male child. Subsequently, there are several writings that report the shipments of cheeses to the Royal Court, particularly during the Christmas season.
