SEA BASS WITH VALE DA ESTRELA CHEESE AND COTTAGE CHEESE SAUCE

Sea Bass with Vale da Estrela cheese and cottage cheese sauce

Ingredients:

1 Skinless, boneless sea bass, cut into tall fillets

1 Vale da Estrela Cottage Cheese
75grs of Vale da Estrela PDO Cheese
200 ml Cream
75 ml Fish broth made with the spine and head of the sea bass, well concentrated and filtered

1 Egg yolk
1 Chive

 

How to do it:

Season the sea bass fillets 30 minutes before cooking, with a little salt, lemon, garlic and bay leaf.
Meanwhile make the sauce: beat the Vale da Estrela cottage cheese very well, add the cream, the fish stock and the Vale da Estrela PDO Cheese. Place the mixture in a saucepan and heat it over low heat, stirring constantly until the cheese melts and comes to a boil.

Let it thicken a little. Add the stirred egg yolk diluted in a little of the previous preparation, stirring carefully, so that the sauce becomes velvety.

Add chopped chives to your liking.

 

 

Set aside to keep the sauce warm.

In a frying pan, place equal parts of margarine and oil. When ready, pass the fillets in this mixture, just 2 minutes on each side.

Place the fish on a platter, cover with the sauce and garnish with chives. Serve it hot.
