RASPBERRY AND SERRA DA ESTRELA COTTAGE CHEESE CAKES

Raspberry and Serra da Estrela Cottage Cheese Cakes:

Recipe by Chef Diogo Rocha, Mesa de Lemos Restaurant  , in Viseu


Ingredients:

 

240g Serra da Estrela Cottage Cheese

5 eggs

50gr butter

100 flour

350 sugar

1 tea spoon baking powder

100gr Raspberries

 

How to do it:

Preheat the oven to 180°

Break uo the cottage cheese with a mixer.

Add the eggs and sugar and use the mixer again

Add the softened butter and finally the flour with the baking powder.

Add the raspberries into pieces and mix with a spoon.

Line the molds with butter and sugar, and pour the mixture into them.

Bake in a bain-marie for 35 minutes.
