Solid rind, in one piece, straw yellow, uniform. Its body texture is buttery, closed or with a few holes, and medium soft; uniform ivory-white. Soft bouquet, clear, slightly acidic.
This is the classic Serra da Estrela, which should be served a couple of hours after taking it from the fridge, it can be cut into slices and tasted with a nice bread or a thin toast.

Smooth rind in one piece, uniform, straw yellow with very few or no spots or coloured in paprika and virgin olive oil.
Its consistency is slightly crumbly and unctuous; closed with very few holes or none; orange or brown-coloured, with its colour becoming darker from the periphery to the centre. Strong flavor or slightly strong, clean, slightly spicy/ salty; nice aroma and persistent.
A cheese born in Serra da Estrela PDO and cherished by a long ripening of 120 days at least. You can try it alone in thin slices and together with a good rye bread or corn bread.

FROM THE ART OF SERVING WELL TO THE PRECEPTS OF A PROPER STORAGE
There is always a place for cheese from Serra da Estela, for breakfast or for the most sophisticated dinner. Traditionally it is served after meals, but more and more it is served as an appetizer.
Depending on the occasion, it can be tasted together with a nice red, white, rose, sparkling wine or Porto Wine.
There should be always bread, certainly. However, some people cannot help but having it with thin crackers or toasts. A nice homemade jam or thin marmalade are greatly enjoyed, as well.
For both texture and aroma to be at their best, in case it is too hot, it is best to keep it in the fridge; it is required to take it from of the fridge 2/ 3 hours prior to serving it.
Daily storage and conservation
Ideally, store the cheese in a cool and ventilated area and flip it frequently. Should any spots arise on the cheese rind, it may be cleaned with a humid cloth in water or olive oil. When it is too hot, the cheese should be wrapped in aluminium foil and stored in the fridge.
Instructions for freezing cheese:
1st Store the cheese in the fridge.
2nd On the following day, cut it into slices or freeze the entire cheese.
3rd Defrost it according to your appetite and needs.
