JNCQuoi Restaurant is a reference of gastronomy excellence in Lisbon, and Chef António Boia shares with us an amazing recipe using Vale da Estrela PDO Cheese.
Vale da Estrela PDO Cheese Pie with fruits of the season
Sweet Dough:
150 gr butter
90 gr caster sugar
1 gr table salt
30 gr almond flour
40 gr egg
250 gr flour
1 gelatine leaf
Preparation:
Place the butter, the caster sugar, the table salt and the gelatin leaf in the bowl and mixed all these ingredients until they turn into a cream. Add the almond flour and the egg, and mixed a little. Add the flour and mix it until it turns into a smooth dough.
Make a square with this dough, wrap it in plastic film, at place it in the fridge for 1 hour.
Take the dough out of the fridge, place it on a counter (which was previously spread with flour) and spread the dough with a rolling pin until it’s 3mm.
Grease the pie container with butter and spread the dough in it. Chill it in the fridge.
Almond Cream:
75 gr butter
75 gr sugar
1 gr table salt
75 gr eggs
75 gr almond flour
1 gelatine leaf
Mix the butter, caster sugar, salt and the gelatine leaf in a bowl until it turns into a cream, add the egg and the almond flour and mix it until you obtain a creamy dough.
Take the pie container out of the fridge and fill it with the almond creamy dough.
Bake it ion the oven, at 160ºC, for about 20 minutes (you may have to adjust the baking time to your oven). The pie should have a golden-brown look.
Let the pie cool completely.
Serra Cheese Ganache:
90 gr milk cream
125 gr Serra Cheese
225 gr white chocolate 35%
20 gr honey
20 gr butter
Preparation:
Place the milk cream on high heat until it boils, take it out of the heat, add the Serra Cheese, and stir it firmly until it melts. Pour it on the slightly melted chocolate, stir it, add the honey and butter and mixed it all with the blender until you get a smooth cream.
Pour it on the pie and cool it in the fridge for about 30 minutes.
Decorate the pie with season fruits, such as strawberries, raspberries, cherries, figs, apricots or pears.
