COTTAGE CHEESE MUFFINS
Cottage Cheese Muffins
Recipe by Maria Teresa Coelho, a tradition from Contenças
Ingredients:
3 eggs
1 Vale da Estrela Cottage Cheese
250 gr sugar
200 gr flour (without baking powder)
1 tea spoon of Royal baking powder
Execution:
Beat the yolks with the sugar, add the beaten egg whites and finally the flour mixed with the Royal baking powder.
Grease muffin tins with margarine, fill with the previous preparation and bake in the oven (180/200 degrees more or less).
When ready, remove from the oven and unmold while still hot.
