COTTAGE CHEESE AND BLUEBERRY PIE
Cottage Cheese and Blueberry Pie – recipe by Maria Teresa Coelho
SWEET DOUGH:
Any sweet dough will do
FILLING:
1 Vale da Estrela Cottage Cheese
1,5 dl cream
100 gr. sugar
1 egg white
3 gelatin leaves
PIE ICING:
1 Vale da Estrela Blueberry jam
2 gelatin leaves
Line a pie base with the dough, prick well with a fork and bake. When ready, remove from oven and let it cool.
Filling preparation:
Whisk the cottage cheese with the sugar. Whip the cream until it is consistent. Add to the previous preparation. Beat the egg whites until stiff and add as well.
Soak the 3 leaves of gelatin in cold water and then dissolve them in 0.5 dl of hot water. Add to the previous preparation. Mix well so that the mixture is homogeneous.
Fill the pie and put it in the fridge until the filling is consistent
Icing Preparation:
Soak the 2 leaves of gelatin in cold water and dissolve them and then mix them in a little of the heated blueberry jam. Add to the rest of the jam, mixing well.
With this preparation, make a border all around the pie, leaving the middle white.
Put the pie back in the fridge so that the blueberry border solidifies as well.
