COD GRATIN WITH SERRA DAESTRELA CHEESE

Cod Gratin with Serra da Estrela Cheese, a recipe by  Chef Diogo Rocha, from  Mesa de Lemos Restaurant, in Viseu.

The restaurant was awarded a Michelin Star, this year.

Ingredients:

4 Cod fillets

700 g Sprouts

q.b. Olive oil

200g Serra da Estrela Cheese

Salt and pepper

2 garlic cloves

 

How to do:

Preheat the oven to 150°C

Place the cod on a tray, with the skin facing up, and cover it with olive oil. Bake in the oven for approximately 15 minutes.

Meanwhile, in a pan with water, bring to a boil olive oil, garlic, salt and pepper. Add the sprouts and let it cook.

Drain the sprouts and remove the garlic.

Remove the cod from the oven and with the help of a knife remove the central spine.

With the skin facing down, cover the fillets with cheese and put it back in the oven to brown for 10 minutes at 180°.

Remove from the oven and serve with the sprouts.
