COD GRATIN WITH SERRA DA ESTRELA POD CHEESE
Recipe for Cod Gratin with Serra da Estrela PDO Cheese, by Chef Diogo Rocha of restaurant Mesa de Lemos, in Viseu
Ingredients:
4 Cod fillets
700 g Sprouts
Olive Oil
200g Serra da Estrela PDO Cheese
q.b. Salt and pepper
2 garlic cloves
Preparation:
Pre-heat the oven at 150°C
Place the cod on a tray with the skin facing up and cover it with olive oil. Bake in the oven for approximately 15 minutes.
Meanwhile, in a pan with water, oil, garlic, salt and pepper, bring to a boil. Add the greens and let it cook.
Drain the greens, and remove the garlic.
Remove the cod from the oven and with the help of a knife remove the central spine of it.
With the skin facing down, cover the fillets with cheese and put it back in the oven to brown for 10 minutes at 180°.
Remove from the oven and serve with the greens.
