CHEF JOSÉ AVILLEZ’S RECIPE: FRIED CORN WITH SERRA DA ESTRELA CHEESE AND THYME

Ingredients:
250g corn flour
1,25l water
1 table spoon of butter
Salt at will
Risso oil to fry
1 sprig of thyme
120g Serra da Estrela Cheese.
Preparation:
Dissolve 1.25g of corn flour in a little cold water. Bring the 1.25l of water to the boil with the butter and salt.
As soon as the water boils, add the crushed corn. A few minutes later, add the remaining corn flour and let it boil until it finishes cooking.
At first, stir occasionally, and once the corn starts to thicken, stir constantly. Remove from heat and place on a tray.
Allow to cool for several hours or, if you prefer, overnight.
When very cold, cut into small rectangles and fry in hot oil until crust is formed.
Drain on absorbent paper. Top with the Serra cheese and thyme and place in the oven or in a salamander to brown slightly. Serve immediately.
