CHEF DIOGO ROCHA’S RECIPE: COD FISH FROM ICELAND AND SERRA DA ESTRELA CHEESE

Recipe by Chef Diogo Rocha, from Restaurant Mesa de Lemos:

Cod Fish from Iceland and Serra da Estrela Cheese

Ingredients:
2 soaked fillets of Cod Fish from Iceland
400g soaked samo (samo is a part of the cod fish)

100 g Serra da Estrela Cheese
100 g Minced onion
5 g Sliced garlic
0,1 L Pepper cream
0,1 L Baked Red Pepper puree
0,2L Olive oil
50 g Minced onion pickles
10 g Mint in julienne
20g de Minced red Pepper
Salt
Pepper

Preparation

Prepare a stir-fry with olive oil, garlic and onion, letting it brown. Then add the cream of peppers and then the previously candied samos. Add the chopped fresh pepper and the fresh mint, then switch off. Rectify seasonings.

While making the previous preparation, place the cod fillets with olive oil on a tray and bake in the oven for 12 minutes at 150º.

When finishing the dish, emulsify the result of the cod in the oven, adding the Serra da Estrela cheese until homogenized, placing it on top of the cod that will already be on the samos stew. Finish with more mint and pickles.
