CATEDRAL BEEF WITH SERRA DA ESTRELA CHEESE
Catedral Beef with Serra da Estrela Cheese
Catedral Steak Recipe with Serra da Estrela Cheese made at the restaurant Catedral da Cerveja inside Estádio da Luz.
Ingredients:
– Beef Steak (Loin);
– Potato Ponte Nova;
– Broccoli;
– Carrot;
– Zuchini;
– Garlic;
– Olive oil;
– Serra da Estrela Buttery Cheese;
– Cream;
– Salt;
– Pepper
– Thyme
Preparation:
Beef steak:
– Cut a Steak with approx. 200gr;
– Sear the meat in a frying pan with a little olive oil, thyme and garlic;
– Season with coarse salt and pepper and let it cook until it reaches its “point” (rare/medium/well done;
– Let the meat rest.
Catedral Souce:
– 100gr de Serra da Estrela cheese;
– Add 50ml of fresh cream;
– Mix very well, heating the mixture over low heat;
– Adjust the seasoning and mix the mixture very well;
What you want is a light cream but intense flavor.
Roasted Vegetables and French Fries:
– Cut the vegetables in even pieces;
– Sauté in a little olive oil;
– Season with salt and pepper;
– Finish in the oven;
– Fry the Potatoes (Ponte Nova type);
– Mix with coarse salt and herbs.
Plating:
– Serve the Steak with the Cathedral Sauce
– Accompany it with Roasted Vegetables
– … and have fun with Potatoes in Sauce…
